Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/3 cup (65g) coconut sugar
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 tbsp (5g) edible gold luster dust
  • 1 tsp (5ml) lemon extract

Instructions:

  1. Cream the softened butter and coconut sugar together using an electric mixer until the mixture is pale and fluffy.
  2. Beat in the egg and vanilla extract until fully incorporated.
  3. Gradually fold in the all-purpose flour, baking powder, and salt until a soft dough forms.
  4. Preheat your oven to 350°F (175°C).
  5. Roll the dough into 1-inch balls, place them on a parchment-lined baking sheet, and flatten slightly with the palm of your hand.
  6. Bake for 8–10 minutes; remove the cookies the moment the edges are just barely set to keep them pale.
  7. Allow the cookies to cool completely on the baking sheet.
  8. To apply the gold finish, either use an edible gold dust spray from 6 inches away or mix the luster dust with lemon extract in a small bowl until it reaches a paint-like consistency and apply with a food-grade paintbrush.
