Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/3 cup (65g) coconut sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1 tbsp (5g) edible gold luster dust
- 1 tsp (5ml) lemon extract
Instructions:
- Cream the softened butter and coconut sugar together using an electric mixer until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually fold in the all-purpose flour, baking powder, and salt until a soft dough forms.
- Preheat your oven to 350°F (175°C).
- Roll the dough into 1-inch balls, place them on a parchment-lined baking sheet, and flatten slightly with the palm of your hand.
- Bake for 8–10 minutes; remove the cookies the moment the edges are just barely set to keep them pale.
- Allow the cookies to cool completely on the baking sheet.
- To apply the gold finish, either use an edible gold dust spray from 6 inches away or mix the luster dust with lemon extract in a small bowl until it reaches a paint-like consistency and apply with a food-grade paintbrush.
