Ingredients:

  • 1 pint (300g) cherry tomatoes
  • 8 oz (225g) fresh mozzarella pearls
  • 16-20 large fresh basil leaves (approx. 10g)
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/4 tsp (1.5g) sea salt
  • 1/4 tsp (0.5g) freshly cracked black pepper
  • 1/4 cup (60ml) thick balsamic glaze

Instructions:

  1. Pat the cherry tomatoes and mozzarella pearls completely dry with paper towels to ensure the glaze clings to the ingredients.
  2. Fold each basil leaf in half or quarters to create a tight pocket.
  3. Thread the bamboo skewers in the following order: cherry tomato, folded basil leaf, and then a mozzarella pearl.
  4. Arrange the assembled skewers on a serving platter.
  5. Lightly drizzle the skewers with olive oil and sprinkle with sea salt and freshly cracked black pepper.
  6. Use a squeeze bottle to apply the balsamic glaze in a zig-zag motion across the skewers.
