Ingredients:
- 2 cups (230g) grated zucchini
- 2 cups (310g) grated Russet or Yukon Gold potatoes
- 1/2 cup (50g) finely diced yellow onion
- 2 cloves (6g) minced garlic
- 1 large (50g) egg, beaten
- 1/4 cup (30g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1 tsp (5g) salt
- 1/2 tsp (2g) cracked black pepper
- 1 tbsp (15ml) fresh dill, chopped
- 3 tbsp (42g) avocado oil
Instructions:
- Grate the zucchini and potatoes into a large bowl.
- Sprinkle the vegetables with 1/2 tsp of salt and toss well. Let the mixture sit for 10 minutes to draw out excess water.
- Transfer the vegetables to a kitchen towel or cheesecloth. Twist and squeeze firmly over the sink until no more liquid escapes.
- In the mixing bowl, combine the squeezed vegetables, diced onion, and minced garlic.
- Stir in the beaten egg, flour, baking powder, remaining salt, pepper, and fresh dill.
- Mix with a spoon until the ingredients are evenly distributed and the batter feels tacky and cohesive.
- Heat avocado oil in a skillet over medium-high heat until it shimmers.
- Scoop approximately 3 tbsp of batter per fritter and sear until golden brown and crispy on both sides.
