Ingredients:

  • 1 lb medium shrimp, peeled and deveined
  • 1 large ripe mango, diced into 1/4 inch cubes
  • 1/4 cup fresh cilantro, finely chopped
  • 1/2 small red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 3 tbsp fresh lime juice
  • 1 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Dice the mango into uniform cubes. In a bowl, combine the mango, red onion, jalapeño, and cilantro, tossing gently to avoid bruising the fruit.
  2. Heat a skillet over high heat with a drizzle of oil. Add shrimp in a single layer and sear for 90 seconds per side until edges are mahogany-colored and opaque. Remove immediately.
  3. Whisk together the lime juice, olive oil, honey, sea salt, and black pepper. Toss the warm shrimp in the glaze and refrigerate for 30 minutes to chill.
  4. Place one cube of mango on each appetizer spoon, top with one glazed shrimp, and garnish with a pinch of fresh cilantro.
