Ingredients:
- 1 lb medium shrimp, peeled and deveined
- 1 large ripe mango, diced into 1/4 inch cubes
- 1/4 cup fresh cilantro, finely chopped
- 1/2 small red onion, finely diced
- 1 jalapeño, seeded and minced
- 3 tbsp fresh lime juice
- 1 tbsp extra virgin olive oil
- 1 tsp honey
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions:
- Dice the mango into uniform cubes. In a bowl, combine the mango, red onion, jalapeño, and cilantro, tossing gently to avoid bruising the fruit.
- Heat a skillet over high heat with a drizzle of oil. Add shrimp in a single layer and sear for 90 seconds per side until edges are mahogany-colored and opaque. Remove immediately.
- Whisk together the lime juice, olive oil, honey, sea salt, and black pepper. Toss the warm shrimp in the glaze and refrigerate for 30 minutes to chill.
- Place one cube of mango on each appetizer spoon, top with one glazed shrimp, and garnish with a pinch of fresh cilantro.
