Ingredients:

  • 8 oz feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • 1/4 tsp cracked black pepper
  • 6 fresh figs, quartered
  • 2 tbsp honey
  • 1/4 cup roasted pistachios, roughly crushed
  • 1 tsp fresh thyme leaves

Instructions:

  1. Combine the crumbled feta, Greek yogurt, olive oil, and lemon juice in the food processor. Pulse until the mixture is combined, then blend on high for 1-2 minutes until glossy and smooth.
  2. Spoon the whipped feta onto a shallow platter. Using the back of a spoon or a spatula, create a deep swirl or a well in the center.
  3. Nestle the quartered figs into the swirls of the cheese, drizzle the honey over the figs and feta, and scatter the crushed pistachios and fresh thyme leaves over the top.
