Ingredients:
- 8 oz feta cheese, crumbled
- 1/2 cup plain Greek yogurt
- 1 tbsp extra virgin olive oil
- 1 tsp lemon juice
- 1/4 tsp cracked black pepper
- 6 fresh figs, quartered
- 2 tbsp honey
- 1/4 cup roasted pistachios, roughly crushed
- 1 tsp fresh thyme leaves
Instructions:
- Combine the crumbled feta, Greek yogurt, olive oil, and lemon juice in the food processor. Pulse until the mixture is combined, then blend on high for 1-2 minutes until glossy and smooth.
- Spoon the whipped feta onto a shallow platter. Using the back of a spoon or a spatula, create a deep swirl or a well in the center.
- Nestle the quartered figs into the swirls of the cheese, drizzle the honey over the figs and feta, and scatter the crushed pistachios and fresh thyme leaves over the top.
