Ingredients:
- 8 oz (225g) Feta cheese, crumbled
- 1/2 cup (120g) Greek yogurt, plain and full-fat
- 2 tbsp (30ml) Extra virgin olive oil
- 1 tbsp (15ml) Fresh lemon juice
- 1 small clove (3g) Garlic, minced
- 1/4 tsp (1.5g) Cracked black pepper
- 3 large (450g) Ripe peaches, pitted and sliced into wedges
- 1 tbsp (15ml) Neutral oil
- 2 tbsp (30g) Honey
- 1 sprig (2g) Fresh thyme
- 1/2 tsp (3g) Flaky sea salt
Instructions:
- Place the crumbled feta, Greek yogurt, olive oil, lemon juice, and garlic into a food processor. Pulse until combined, then blend on high for 1-2 minutes until the mixture is a smooth, glossy cloud with no visible lumps.
- Transfer the whipped feta to a serving bowl and smooth the top with a spatula.
- Heat a skillet over medium-high heat with the neutral oil. Once shimmering, place peach wedges in a single layer and sear for 2-3 minutes per side until a deep mahogany char forms.
- Remove the peaches from heat and immediately drizzle with honey while the fruit is still sizzling.
- Spoon the chilled whipped feta onto a platter, creating a well or swirl with the back of the spoon. Nestle the warm, honeyed peaches into the cheese and garnish with flaky sea salt and fresh thyme leaves.
