Ingredients:

  • 8 oz (225g) Feta cheese, crumbled
  • 1/2 cup (120g) Plain Greek yogurt
  • 1 tbsp (15ml) Extra virgin olive oil
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 clove (3g) Garlic, minced
  • 1/4 tsp (1.5g) Black pepper
  • 3 tbsp (60ml) Honey
  • 2 tbsp (15g) Roasted pistachios, crushed
  • 2 tbsp (30g) Pomegranate seeds
  • 1 tsp (2g) Fresh thyme or mint leaves

Instructions:

  1. Place the crumbled feta, Greek yogurt, olive oil, lemon juice, garlic, and pepper into the food processor.
  2. Pulse 5-10 times to break down the cheese, then blend on high for 1-2 minutes until the mixture is completely smooth and airy.
  3. Spoon the mixture onto a shallow platter and use the back of a spoon to create a deep spiral well in the center.
  4. Drizzle honey into the center of the swirl, then scatter crushed pistachios and pomegranate seeds over the top.
  5. Garnish with fresh thyme or mint leaves.
