Ingredients:
- 8 oz (225g) Feta cheese, crumbled
- 1/2 cup (120g) Plain Greek yogurt
- 1 tbsp (15ml) Extra virgin olive oil
- 1 tbsp (15ml) Fresh lemon juice
- 1 clove (3g) Garlic, minced
- 1/4 tsp (1.5g) Black pepper
- 3 tbsp (60ml) Honey
- 2 tbsp (15g) Roasted pistachios, crushed
- 2 tbsp (30g) Pomegranate seeds
- 1 tsp (2g) Fresh thyme or mint leaves
Instructions:
- Place the crumbled feta, Greek yogurt, olive oil, lemon juice, garlic, and pepper into the food processor.
- Pulse 5-10 times to break down the cheese, then blend on high for 1-2 minutes until the mixture is completely smooth and airy.
- Spoon the mixture onto a shallow platter and use the back of a spoon to create a deep spiral well in the center.
- Drizzle honey into the center of the swirl, then scatter crushed pistachios and pomegranate seeds over the top.
- Garnish with fresh thyme or mint leaves.
