Ingredients:
- 8 oz (225g) Feta cheese, crumbled
- 1/2 cup (120g) plain full-fat Greek yogurt
- 2 tbsp (30ml) extra virgin olive oil
- 1 clove (5g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 2 tbsp (42g) honey
- 1 tbsp (15ml) extra virgin olive oil
- 1 tsp (1g) red pepper flakes
- 1 tbsp (4g) fresh parsley or mint, chopped
Instructions:
- Zest the lemon first, then juice it. Mince the garlic finely to ensure there are no large chunks of raw garlic in the final dip.
- Combine the crumbled feta, Greek yogurt, minced garlic, lemon juice, and lemon zest in the food processor.
- Pulse several times to break up the feta, then blend on high.
- While the motor is running, slowly stream in 2 tablespoons of olive oil. Process for 1–2 minutes until the mixture looks velvety and holds a soft peak.
- Spoon the dip into a shallow bowl and use the back of a spoon to create a circular swirl.
- In a small bowl, whisk together the honey and 1 tablespoon of olive oil.
- Pour the honey mixture into the swirls of the dip.
- Sprinkle with red pepper flakes and fresh herbs for a pop of color.
