Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs (approx. 100g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (150g) finely grated zucchini
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/4 tsp (1g) baking powder
  • 1/2 tsp (3g) salt
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Grate zucchini using the smallest holes on a box grater to ensure a seamless blend.
  3. In a large bowl, whisk together melted butter and granulated sugar until combined.
  4. Beat in eggs and vanilla extract one at a time until the mixture is smooth and glossy.
  5. Stir in the grated zucchini using a spatula.
  6. Sift in flour, cocoa powder, baking powder, and salt. Fold gently with a spatula just until no streaks of white flour remain; do not overmix.
  7. Fold in the semi-sweet chocolate chips.
  8. Pour batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 28–32 minutes until the edges are set and slightly pulling away from the sides, while the center remains slightly soft.
