Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs (approx. 100g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (150g) finely grated zucchini
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1/4 tsp (1g) baking powder
- 1/2 tsp (3g) salt
- 3/4 cup (130g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Grate zucchini using the smallest holes on a box grater to ensure a seamless blend.
- In a large bowl, whisk together melted butter and granulated sugar until combined.
- Beat in eggs and vanilla extract one at a time until the mixture is smooth and glossy.
- Stir in the grated zucchini using a spatula.
- Sift in flour, cocoa powder, baking powder, and salt. Fold gently with a spatula just until no streaks of white flour remain; do not overmix.
- Fold in the semi-sweet chocolate chips.
- Pour batter into the prepared pan and smooth the top with a spatula.
- Bake for 28–32 minutes until the edges are set and slightly pulling away from the sides, while the center remains slightly soft.
