Ingredients:

  • 3 large overripe bananas (approx. 340g)
  • 0.5 cup unsalted butter (113g), melted and cooled
  • 0.25 cup full fat Greek yogurt or sour cream (60g)
  • 1 large egg (50g), room temperature
  • 0.5 cup granulated sugar (100g)
  • 0.5 cup light brown sugar (100g), packed
  • 1.5 tsp vanilla extract
  • 1.5 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 0.5 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips (170g), divided

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, mash the bananas using a potato masher or fork until mostly smooth, leaving some small pea-sized chunks for texture.
  3. Whisk the melted butter into the mashed bananas. Add the granulated sugar, light brown sugar, egg, Greek yogurt, and vanilla extract. Whisk vigorously until the mixture is emulsified and glossy.
  4. Sift the all-purpose flour, baking soda, salt, and cinnamon directly over the wet ingredients.
  5. Switch to a silicone spatula and gently fold the dry ingredients into the wet batter until just combined. Do not overmix.
  6. Fold in the majority of the chocolate chips, reserving a small handful for the top.
  7. Pour the batter into the prepared loaf pan and sprinkle the reserved chocolate chips over the top. Bake for 60 minutes or until a skewer inserted into the center comes out clean.
