Ingredients:
- 3 large overripe bananas (approx. 340g)
- 0.5 cup unsalted butter (113g), melted and cooled
- 0.25 cup full fat Greek yogurt or sour cream (60g)
- 1 large egg (50g), room temperature
- 0.5 cup granulated sugar (100g)
- 0.5 cup light brown sugar (100g), packed
- 1.5 tsp vanilla extract
- 1.5 cups all-purpose flour (190g)
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 0.5 tsp ground cinnamon
- 1 cup semi-sweet chocolate chips (170g), divided
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, mash the bananas using a potato masher or fork until mostly smooth, leaving some small pea-sized chunks for texture.
- Whisk the melted butter into the mashed bananas. Add the granulated sugar, light brown sugar, egg, Greek yogurt, and vanilla extract. Whisk vigorously until the mixture is emulsified and glossy.
- Sift the all-purpose flour, baking soda, salt, and cinnamon directly over the wet ingredients.
- Switch to a silicone spatula and gently fold the dry ingredients into the wet batter until just combined. Do not overmix.
- Fold in the majority of the chocolate chips, reserving a small handful for the top.
- Pour the batter into the prepared loaf pan and sprinkle the reserved chocolate chips over the top. Bake for 60 minutes or until a skewer inserted into the center comes out clean.
