Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 tsp (1.5g) salt
  • 1 cup (150g) fresh strawberries, pureed
  • 3 large eggs
  • 1 1/2 cups (300g) granulated sugar
  • 3 tbsp (25g) all-purpose flour
  • 1/4 cup (60ml) fresh lemon juice
  • 1 tbsp (6g) lemon zest
  • 1/8 tsp (0.75g) salt
  • 2 tbsp (15g) powdered sugar

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the melted butter, flour, sugar, and salt. Mix until the dough resembles wet sand and clumps together.
  3. Press the dough firmly and evenly into the bottom of the prepared pan.
  4. Bake the crust for 20 minutes or until the edges are just barely golden. Remove from the oven and let cool slightly.
  5. Puree the fresh strawberries in a blender until completely smooth.
  6. In a mixing bowl, whisk the eggs and sugar together until the mixture is pale and slightly frothy.
  7. Stir in the strawberry puree, lemon juice, lemon zest, and salt.
  8. Sift in the flour and whisk gently until no lumps remain, taking care not to over-mix.
  9. Pour the strawberry lemonade filling over the pre-baked crust and spread evenly.
  10. Bake the bars until the filling is set, then allow them to cool completely before chilling in the refrigerator for 4 hours.
  11. Dust with powdered sugar before slicing into 16 clean squares.
