Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 tsp (1.5g) salt
- 1 cup (150g) fresh strawberries, pureed
- 3 large eggs
- 1 1/2 cups (300g) granulated sugar
- 3 tbsp (25g) all-purpose flour
- 1/4 cup (60ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
- 1/8 tsp (0.75g) salt
- 2 tbsp (15g) powdered sugar
Instructions:
- Preheat the oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, combine the melted butter, flour, sugar, and salt. Mix until the dough resembles wet sand and clumps together.
- Press the dough firmly and evenly into the bottom of the prepared pan.
- Bake the crust for 20 minutes or until the edges are just barely golden. Remove from the oven and let cool slightly.
- Puree the fresh strawberries in a blender until completely smooth.
- In a mixing bowl, whisk the eggs and sugar together until the mixture is pale and slightly frothy.
- Stir in the strawberry puree, lemon juice, lemon zest, and salt.
- Sift in the flour and whisk gently until no lumps remain, taking care not to over-mix.
- Pour the strawberry lemonade filling over the pre-baked crust and spread evenly.
- Bake the bars until the filling is set, then allow them to cool completely before chilling in the refrigerator for 4 hours.
- Dust with powdered sugar before slicing into 16 clean squares.
