Ingredients:
- 1 lb lean ground beef (90/10)
- 1 tbsp extra virgin olive oil
- 1 small head green cabbage, shredded into 1/2-inch ribbons (approx. 800g)
- 1 medium yellow onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp toasted cumin
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 1/2 tsp red pepper flakes
Instructions:
- Place a large 12-inch heavy-bottomed skillet over medium-high heat with the olive oil. Once shimmering, add the ground beef in one large patty. Let it sit undisturbed for 5 minutes until a deep brown crust forms. Flip, then break into bite-sized pieces.
- Stir in the sliced onion and 3 minced garlic cloves. Sauté for 3 minutes until the onions are translucent and fragrant.
- Add the smoked paprika, cumin, salt, black pepper, and red pepper flakes.
- Add the 800g of cabbage ribbons in two batches. Toss for 5-7 minutes until the cabbage is tender crisp and bright green.
- Pour in 2 tbsp soy sauce and 1 tbsp apple cider vinegar. Scrape the bottom of the pan to release all those savory browned bits.
