Ingredients:

  • 1 lb lean ground beef (90/10)
  • 1 tbsp extra virgin olive oil
  • 1 small head green cabbage, shredded into 1/2-inch ribbons (approx. 800g)
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp toasted cumin
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1/2 tsp red pepper flakes

Instructions:

  1. Place a large 12-inch heavy-bottomed skillet over medium-high heat with the olive oil. Once shimmering, add the ground beef in one large patty. Let it sit undisturbed for 5 minutes until a deep brown crust forms. Flip, then break into bite-sized pieces.
  2. Stir in the sliced onion and 3 minced garlic cloves. Sauté for 3 minutes until the onions are translucent and fragrant.
  3. Add the smoked paprika, cumin, salt, black pepper, and red pepper flakes.
  4. Add the 800g of cabbage ribbons in two batches. Toss for 5-7 minutes until the cabbage is tender crisp and bright green.
  5. Pour in 2 tbsp soy sauce and 1 tbsp apple cider vinegar. Scrape the bottom of the pan to release all those savory browned bits.
