Ingredients:
- 1 lb (450g) Smoked Turkey Sausage, sliced into ¼-inch rounds
- 1 lb (450g) Baby Potatoes, halved or quartered
- 2 medium (120g) Carrots, peeled and sliced into coins
- 1 large (150g) Red Onion, cut into 1-inch chunks
- 1 large (150g) Red Bell Pepper, chopped into 1-inch pieces
- 2 cups (150g) Broccoli florets
- 3 tbsp (45ml) Extra Virgin Olive Oil
- 1 tbsp (8g) Garlic Powder
- 1 tsp (2g) Smoked Paprika
- ½ tsp (3g) Dried Oregano
- ½ tsp (3g) Sea Salt
- ¼ tsp (1g) Black Pepper
Instructions:
- Preheat your oven to 200°C (400°F). Line your sheet pan with parchment paper.
- Place sliced sausage, potatoes, carrots, onion, and bell pepper in a large bowl.
- Drizzle 45ml olive oil over the mix. Note: This ensures the veg doesn't dry out.
- Sprinkle in garlic powder, paprika, oregano, salt, and pepper. Toss until every piece is glistening.
- Spread the mixture in a single layer on the pan. Ensure no pieces are overlapping.
- Roast for 15 minutes.
- Remove the pan from the oven. Add the broccoli florets and toss them with the other ingredients.
- Roast for another 15 minutes until the potatoes are fork tender and sausage edges are brown.
