Ingredients:

  • 1 lb (450g) Smoked Turkey Sausage, sliced into ¼-inch rounds
  • 1 lb (450g) Baby Potatoes, halved or quartered
  • 2 medium (120g) Carrots, peeled and sliced into coins
  • 1 large (150g) Red Onion, cut into 1-inch chunks
  • 1 large (150g) Red Bell Pepper, chopped into 1-inch pieces
  • 2 cups (150g) Broccoli florets
  • 3 tbsp (45ml) Extra Virgin Olive Oil
  • 1 tbsp (8g) Garlic Powder
  • 1 tsp (2g) Smoked Paprika
  • ½ tsp (3g) Dried Oregano
  • ½ tsp (3g) Sea Salt
  • ¼ tsp (1g) Black Pepper

Instructions:

  1. Preheat your oven to 200°C (400°F). Line your sheet pan with parchment paper.
  2. Place sliced sausage, potatoes, carrots, onion, and bell pepper in a large bowl.
  3. Drizzle 45ml olive oil over the mix. Note: This ensures the veg doesn't dry out.
  4. Sprinkle in garlic powder, paprika, oregano, salt, and pepper. Toss until every piece is glistening.
  5. Spread the mixture in a single layer on the pan. Ensure no pieces are overlapping.
  6. Roast for 15 minutes.
  7. Remove the pan from the oven. Add the broccoli florets and toss them with the other ingredients.
  8. Roast for another 15 minutes until the potatoes are fork tender and sausage edges are brown.
