Ingredients:

  • 2 medium zucchinis (approx 1 lb / 450g), sliced into ¼ inch rounds or spears
  • 1 tbsp olive oil
  • ½ cup (50g) freshly grated Parmesan cheese
  • ½ tsp garlic powder
  • ¼ tsp kosher salt
  • ¼ tsp freshly cracked black pepper

Instructions:

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper and set a wire cooling rack on top to allow for airflow.
  2. Toss the zucchini slices in a medium mixing bowl with olive oil until lightly coated.
  3. In a small bowl, whisk together the grated Parmesan cheese, garlic powder, salt, and pepper.
  4. Add the oiled zucchini to the cheese mixture and toss gently until every piece is evenly dredged in the Parmesan crust.
  5. Place the zucchini in a single layer on the wire rack, ensuring at least ½ inch of space between each piece.
  6. Bake for 15-18 minutes.
  7. Switch the oven to Broil for the final 2 minutes, watching closely until the crust is mahogany-colored and bubbling.
