- 2 medium zucchinis (approx 1 lb / 450g), sliced into ¼ inch rounds or spears
- 1 tbsp olive oil
- ½ cup (50g) freshly grated Parmesan cheese
- ½ tsp garlic powder
- ¼ tsp kosher salt
- ¼ tsp freshly cracked black pepper
Instructions:
- Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper and set a wire cooling rack on top to allow for airflow.
- Toss the zucchini slices in a medium mixing bowl with olive oil until lightly coated.
- In a small bowl, whisk together the grated Parmesan cheese, garlic powder, salt, and pepper.
- Add the oiled zucchini to the cheese mixture and toss gently until every piece is evenly dredged in the Parmesan crust.
- Place the zucchini in a single layer on the wire rack, ensuring at least ½ inch of space between each piece.
- Bake for 15-18 minutes.
- Switch the oven to Broil for the final 2 minutes, watching closely until the crust is mahogany-colored and bubbling.
