Ingredients:
- 8 oz (225g) cream cheese, softened to room temperature
- 1/2 cup (120g) plain Greek yogurt
- 1/4 cup (60ml) sour cream
- 1 cup (115g) shredded sharp cheddar cheese
- 1 tbsp (8g) taco seasoning
- 1 tsp (5g) smoked paprika
- 1/2 tsp (3g) garlic powder
- 1 tbsp (15ml) fresh lime juice
- 1/2 cup (120ml) chunky salsa
- 2 tbsp (10g) chopped fresh cilantro
- 1 tbsp (15g) diced red onion
- 1 sliced jalapeño
Instructions:
- In a large mixing bowl, beat the softened cream cheese, Greek yogurt, and sour cream together using a spatula until smooth and no lumps remain.
- Stir in the taco seasoning, smoked paprika, and garlic powder until the mixture is a uniform, pale orange hue.
- Fold in half of the shredded cheddar cheese and the lime juice.
- Transfer the mixture into an 8x8 inch baking dish, smoothing the top with a spatula.
- Spread the drained salsa evenly over the surface, pressing it slightly into the cream cheese.
- Top with the remaining shredded cheddar cheese.
- Bake at 350°F (175°C) for 15–20 minutes, or until the edges are bubbling and the cheese has melted into a golden-brown crust.
- Remove from the oven and let it rest for 5 minutes to set.
- Scatter the fresh cilantro, red onion, and jalapeño slices over the top just before serving.
