Ingredients:
- 2 medium zucchini, sliced into 1/4 inch rounds (approx. 1 lb / 450g)
- 1 medium yellow onion, thinly sliced (approx. 5 oz / 140g)
- 3 cloves garlic, minced (approx. 1 tbsp / 15g)
- 1 tsp kosher salt
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 1 tbsp lemon juice
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions:
- Place sliced zucchini in a colander and toss with 1 tsp of salt. Let the zucchini sit for 15 minutes to sweat.
- Rinse the zucchini quickly with cold water and pat thoroughly dry with a kitchen towel.
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, red pepper flakes, and black pepper.
- Add the dried zucchini slices and sliced onions to the bowl. Toss until every piece is glossy and evenly coated.
- Transfer the mixture into a 9x13-inch baking dish, spreading it in an even layer.
- Sprinkle the crumbled feta and grated Parmesan evenly across the top.
- Bake for 35-40 minutes until the zucchini is tender and the cheese has turned a deep golden brown.
- Garnish with fresh parsley immediately after removing from the oven.
