Ingredients:

  • 2 medium zucchini, sliced into 1/4 inch rounds (approx. 1 lb / 450g)
  • 1 medium yellow onion, thinly sliced (approx. 5 oz / 140g)
  • 3 cloves garlic, minced (approx. 1 tbsp / 15g)
  • 1 tsp kosher salt
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Place sliced zucchini in a colander and toss with 1 tsp of salt. Let the zucchini sit for 15 minutes to sweat.
  2. Rinse the zucchini quickly with cold water and pat thoroughly dry with a kitchen towel.
  3. Preheat your oven to 375°F (190°C).
  4. In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, red pepper flakes, and black pepper.
  5. Add the dried zucchini slices and sliced onions to the bowl. Toss until every piece is glossy and evenly coated.
  6. Transfer the mixture into a 9x13-inch baking dish, spreading it in an even layer.
  7. Sprinkle the crumbled feta and grated Parmesan evenly across the top.
  8. Bake for 35-40 minutes until the zucchini is tender and the cheese has turned a deep golden brown.
  9. Garnish with fresh parsley immediately after removing from the oven.
