Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- ⅓ cup (75g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- 1 can (14 oz / 397g) sweetened condensed milk
- 3 large (150g) eggs
- ⅓ cup (80ml) fresh lemon juice
- ⅓ cup (80ml) fresh lime juice
- 1 tbsp (6g) lemon zest
- 1 tbsp (6g) lime zest
- ¼ tsp (1.5g) salt
- ½ cup (60g) confectioners' sugar, sifted
Instructions:
- Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- Combine graham cracker crumbs, sugar, and melted butter in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the pan using the back of a spoon.
- Bake for 8–10 minutes until the edges are lightly browned and it smells nutty. Remove from the oven and let it cool slightly.
- In a large bowl, whisk the sweetened condensed milk and eggs together until smooth.
- Stir in the fresh lemon juice, lime juice, lemon zest, lime zest, and salt.
- Whisk gently until combined; avoid over-beating to prevent incorporating too many air bubbles.
- Pour the filling evenly over the warm crust, smoothing the top with an offset spatula.
- Bake for 18–22 minutes until the edges are set, but the center still has a slight, jelly-like jiggle.
- Remove from the oven and cool completely on a wire rack.
- Transfer the pan to the refrigerator for at least 4 hours (or overnight) to ensure the bars are fully set.
- Lift the bars out using the parchment handles and dust generously with sifted confectioners' sugar.
