Ingredients:
- 2 lbs carrots, peeled and halved lengthwise
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 3 tbsp clover honey
- 1 tbsp unsalted butter, melted
- 1 tsp red pepper flakes
- 1 tsp apple cider vinegar
- 1 pinch smoked paprika
- 4 oz goat cheese crumbles
- 2 tbsp fresh flat leaf parsley, chopped
Instructions:
- Preheat the oven to 400°F (200°C) and place your baking sheet inside to get hot.
- Prep the 2 lbs of carrots by peeling and slicing them lengthwise.
- In a large mixing bowl, toss the carrots with olive oil, salt, and pepper until evenly coated.
- Arrange carrots in a single layer on the hot baking sheet, ensuring at least half an inch of space between each piece to prevent steaming.
- Roast for 20 minutes until the bottoms are golden brown and edges start to shrivel.
- While carrots roast, whisk together the honey, melted butter, red pepper flakes, apple cider vinegar, and smoked paprika in a small bowl.
- Remove the baking sheet from the oven. Drizzle the honey mixture over the carrots and toss well with tongs to coat. Return to the oven for a final 10 minutes until the glaze is bubbling and mahogany-colored.
- Remove from the oven and garnish immediately with goat cheese crumbles and fresh parsley before serving.
