Ingredients:
- 2 lbs (900g) zucchini, coarsely grated
- 1 tsp (6g) salt
- 1/2 cup (60g) feta cheese, crumbled
- 4 green onions, finely chopped
- 3 tbsp (10g) fresh mint, finely chopped
- 2 tbsp (8g) fresh dill, finely chopped
- 1 large egg, lightly beaten
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (30g) Panko bread crumbs
- 1/2 tsp (3g) black pepper
- 1/2 cup (120ml) extra virgin olive oil
Instructions:
- Toss the grated zucchini with 1 tsp of salt in a colander and let it sit for 10 minutes. Transfer the zucchini to a kitchen towel or cheesecloth and squeeze until no more liquid escapes.
- In a large bowl, combine the squeezed zucchini, crumbled feta, chopped green onions, mint, and dill. Stir in the beaten egg and black pepper.
- Gradually fold in the flour and Panko bread crumbs until the mixture holds together when pressed.
- Heat olive oil in a skillet over medium-high heat. Once the oil shimmers, scoop about 2 tbsp of batter per fritter and flatten slightly with a spatula.
- Fry for 3–4 minutes per side until deep golden brown. Drain on paper towels.
