Ingredients:

  • 2 lbs (900g) zucchini, coarsely grated
  • 1 tsp (6g) salt
  • 1/2 cup (60g) feta cheese, crumbled
  • 4 green onions, finely chopped
  • 3 tbsp (10g) fresh mint, finely chopped
  • 2 tbsp (8g) fresh dill, finely chopped
  • 1 large egg, lightly beaten
  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (30g) Panko bread crumbs
  • 1/2 tsp (3g) black pepper
  • 1/2 cup (120ml) extra virgin olive oil

Instructions:

  1. Toss the grated zucchini with 1 tsp of salt in a colander and let it sit for 10 minutes. Transfer the zucchini to a kitchen towel or cheesecloth and squeeze until no more liquid escapes.
  2. In a large bowl, combine the squeezed zucchini, crumbled feta, chopped green onions, mint, and dill. Stir in the beaten egg and black pepper.
  3. Gradually fold in the flour and Panko bread crumbs until the mixture holds together when pressed.
  4. Heat olive oil in a skillet over medium-high heat. Once the oil shimmers, scoop about 2 tbsp of batter per fritter and flatten slightly with a spatula.
  5. Fry for 3–4 minutes per side until deep golden brown. Drain on paper towels.
