Ingredients:

  • 1.5 lbs zucchini, sliced into 1/4-inch rounds
  • 2 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, finely grated
  • 1 tsp dried Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Pat the zucchini slices thoroughly dry with paper towels. Toss the slices in a bowl with the salt and pepper.
  2. Heat the olive oil and butter in a 12-inch cast iron skillet or heavy-bottomed non-stick pan over medium-high heat until the butter stops foaming and begins to smell nutty.
  3. Arrange the zucchini in a single layer in the skillet. Cook without stirring for 3-4 minutes until a golden-brown crust forms on the bottom.
  4. Flip the zucchini slices. Immediately add the minced garlic and Italian seasoning to the pan, stirring gently to toast the garlic.
  5. Sprinkle the Parmesan cheese evenly over the top. Cook for another 2-3 minutes until the cheese is melted and slightly toasted.
