Ingredients:
- 1.5 lbs zucchini, sliced into 1/4-inch rounds
- 2 tbsp extra virgin olive oil
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/2 cup Parmesan cheese, finely grated
- 1 tsp dried Italian seasoning
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Pat the zucchini slices thoroughly dry with paper towels. Toss the slices in a bowl with the salt and pepper.
- Heat the olive oil and butter in a 12-inch cast iron skillet or heavy-bottomed non-stick pan over medium-high heat until the butter stops foaming and begins to smell nutty.
- Arrange the zucchini in a single layer in the skillet. Cook without stirring for 3-4 minutes until a golden-brown crust forms on the bottom.
- Flip the zucchini slices. Immediately add the minced garlic and Italian seasoning to the pan, stirring gently to toast the garlic.
- Sprinkle the Parmesan cheese evenly over the top. Cook for another 2-3 minutes until the cheese is melted and slightly toasted.
