Ingredients:
- 3/4 cup (90g) unsweetened cocoa powder
- 1 cup (110g) almond flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1 1/2 cups (150g) finely shredded zucchini, squeezed dry
- 1/2 cup (120ml) maple syrup
- 1/3 cup (80ml) coconut oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (85g) dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving a little overhang for easy lifting.
- Grate the zucchini finely. Place the shreds in a clean kitchen towel and squeeze firmly over the sink until most of the liquid is gone. Note: This prevents a soggy center.
- In a large bowl, whisk together the cocoa powder, almond flour, baking soda, and sea salt.
- In a separate bowl, beat the eggs, maple syrup, coconut oil, and vanilla extract until smooth.
- Fold the wet ingredients into the dry ingredients until just combined. Do not over mix.
- Stir in the squeezed zucchini and dark chocolate chips.
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes until the edges are set and a toothpick comes out with a few moist crumbs.
- Let the Zucchini Brownies cool completely in the pan. This is when the structure actually sets.
