Ingredients:

  • 2 cups (200g) unsweetened shredded coconut
  • ½ cup (150g) sweetened condensed milk
  • 2 oz (56g) light cream cheese, softened
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Place the shredded coconut in a dry skillet over medium heat.
  2. Stir constantly for 3-5 minutes until the coconut turns a light golden brown and smells nutty. Note: Coconut burns fast, so stay focused.
  3. Remove the coconut from the heat immediately and set it aside to cool slightly.
  4. In a mixing bowl, combine the softened light cream cheese and sweetened condensed milk.
  5. Stir the mixture until it is velvety and free of lumps.
  6. Fold in the vanilla extract with a few quick strokes.
  7. Pour the toasted coconut into the milk mixture.
  8. Fold with a spatula until every shred is evenly coated.
  9. Scoop portions about 1 tablespoon each and roll them into balls.
  10. Place the treats on a parchment lined sheet and refrigerate for 15 minutes until the fats set and the structure firms up.
