Ingredients:
- 2 cups (200g) unsweetened shredded coconut
- ½ cup (150g) sweetened condensed milk
- 2 oz (56g) light cream cheese, softened
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Place the shredded coconut in a dry skillet over medium heat.
- Stir constantly for 3-5 minutes until the coconut turns a light golden brown and smells nutty. Note: Coconut burns fast, so stay focused.
- Remove the coconut from the heat immediately and set it aside to cool slightly.
- In a mixing bowl, combine the softened light cream cheese and sweetened condensed milk.
- Stir the mixture until it is velvety and free of lumps.
- Fold in the vanilla extract with a few quick strokes.
- Pour the toasted coconut into the milk mixture.
- Fold with a spatula until every shred is evenly coated.
- Scoop portions about 1 tablespoon each and roll them into balls.
- Place the treats on a parchment lined sheet and refrigerate for 15 minutes until the fats set and the structure firms up.
