Ingredients:
- 1.5 lbs baby red or yellow potatoes
- 1 tbsp sea salt
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 0.5 tsp smoked paprika
- 0.5 tsp dried rosemary
- 0.5 tsp cracked black pepper
- 0.25 tsp flaky sea salt
Instructions:
- Place baby potatoes in a pot of cold water with 1 tbsp sea salt. Bring to a boil and cook for 12–15 minutes until fork-tender.
- Drain the potatoes and let them sit in the hot pot for 2 minutes until the skins look matte and dry.
- Place potatoes on a flat surface and use a heavy glass to gently press each potato until it is approximately 1.5 cm thick.
- In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, rosemary, and black pepper. Brush the mixture generously over both sides of each smashed potato.
- Arrange potatoes in a single layer in the air fryer basket. Air fry at 200°C for 15 minutes until edges are dark gold and crackling. Finish with a sprinkle of flaky sea salt.
