Ingredients:
- 1 cup (225g) full-fat cottage cheese
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp fine sea salt
- 1 tbsp grated Parmesan cheese
Instructions:
- Preheat your oven to 350°F (180°C) and prepare a 13x18 inch rimmed baking sheet by lining it with high-quality parchment paper.
- Combine the 1 cup cottage cheese, 2 large eggs, garlic powder, oregano, and sea salt in your blender.
- Process the mixture on high for 45 seconds until the liquid is completely smooth and pale yellow.
- Prepare your baking sheet by lining it with parchment paper, ensuring it's flat with no creases.
- Pour the mixture onto the center of the sheet and spread it with a spatula into a rectangle until it is roughly 1/4 inch thick.
- Sprinkle the 1 tbsp of grated Parmesan evenly over the top until the surface is lightly speckled.
- Bake for 35 minutes until the edges are deep golden brown and the center feels firm.
- Observe the surface; you should see small bubbles that have set into a matte finish.
- Remove from the oven and let it sit on the pan for 5 minutes.
- Peel the parchment away slowly until the flatbread releases cleanly with a slight crackle.
