Ingredients:

  • 1 cup (225g) full-fat cottage cheese
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp fine sea salt
  • 1 tbsp grated Parmesan cheese

Instructions:

  1. Preheat your oven to 350°F (180°C) and prepare a 13x18 inch rimmed baking sheet by lining it with high-quality parchment paper.
  2. Combine the 1 cup cottage cheese, 2 large eggs, garlic powder, oregano, and sea salt in your blender.
  3. Process the mixture on high for 45 seconds until the liquid is completely smooth and pale yellow.
  4. Prepare your baking sheet by lining it with parchment paper, ensuring it's flat with no creases.
  5. Pour the mixture onto the center of the sheet and spread it with a spatula into a rectangle until it is roughly 1/4 inch thick.
  6. Sprinkle the 1 tbsp of grated Parmesan evenly over the top until the surface is lightly speckled.
  7. Bake for 35 minutes until the edges are deep golden brown and the center feels firm.
  8. Observe the surface; you should see small bubbles that have set into a matte finish.
  9. Remove from the oven and let it sit on the pan for 5 minutes.
  10. Peel the parchment away slowly until the flatbread releases cleanly with a slight crackle.
