Ingredients:

  • 2 cups (180g) rolled oats
  • 1 scoop (30g) vanilla protein powder
  • 2 cups (480ml) unsweetened almond milk
  • 1/2 cup (120g) Greek yogurt, plain
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (2g) vanilla extract
  • 1 pinch (1g) sea salt
  • 2 tbsp (30g) Greek yogurt
  • 1 tbsp (15ml) pure maple syrup
  • 1/4 tsp (1g) ground cinnamon
  • 1 tsp (5ml) milk

Instructions:

  1. In a large bowl or blender, combine the almond milk, Greek yogurt, maple syrup, vanilla extract, and salt. Stir or blend until the mixture is completely smooth.
  2. Slowly fold in the protein powder and cinnamon, whisking until no lumps remain.
  3. Stir in the rolled oats until they are fully submerged.
  4. Divide the mixture evenly among four 16 oz mason jars. Seal the lids tightly and refrigerate for at least 6 hours or overnight.
  5. Just before serving, whisk together the glaze ingredients (Greek yogurt, maple syrup, ground cinnamon, and milk) in a small bowl until smooth.
  6. Drizzle the maple cinnamon glaze over the top of the chilled oats and sprinkle with an extra pinch of cinnamon.
