Ingredients:
- 1 lb boneless skinless chicken breasts, cut into 1-inch bites
- 1 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 3 medium zucchini, spiralized
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Place spiralized zucchini in a colander and sprinkle with a pinch of salt. Let sit 10 minutes until the noodles look damp.
- Pat them dry with a paper towel to remove as much surface moisture as possible.
- Heat olive oil in a skillet over medium high heat.
- Toss chicken bites with salt, pepper, and paprika.
- Place chicken in the pan in a single layer. Sear 3 minutes without moving them until a brown crust forms.
- Flip and cook for another 3-4 minutes until the centers are opaque. Remove chicken and set aside.
- Melt butter in the same pan over medium heat.
- Sauté minced garlic 30-60 seconds until it smells fragrant.
- Toss in zucchini noodles and sauté for 2-3 minutes until warm but still crisp.
- Return the chicken to the pan.
- Stir in lemon juice, lemon zest, and Parmesan. Toss for 1 minute until the cheese creates a silky coating.
- Garnish with parsley and serve.
