Ingredients:

  • 1 lb boneless skinless chicken breasts, cut into 1-inch bites
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 3 medium zucchini, spiralized
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Place spiralized zucchini in a colander and sprinkle with a pinch of salt. Let sit 10 minutes until the noodles look damp.
  2. Pat them dry with a paper towel to remove as much surface moisture as possible.
  3. Heat olive oil in a skillet over medium high heat.
  4. Toss chicken bites with salt, pepper, and paprika.
  5. Place chicken in the pan in a single layer. Sear 3 minutes without moving them until a brown crust forms.
  6. Flip and cook for another 3-4 minutes until the centers are opaque. Remove chicken and set aside.
  7. Melt butter in the same pan over medium heat.
  8. Sauté minced garlic 30-60 seconds until it smells fragrant.
  9. Toss in zucchini noodles and sauté for 2-3 minutes until warm but still crisp.
  10. Return the chicken to the pan.
  11. Stir in lemon juice, lemon zest, and Parmesan. Toss for 1 minute until the cheese creates a silky coating.
  12. Garnish with parsley and serve.
