  • 60g vanilla protein powder (whey/casein blend)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 245g Greek yogurt (plain or vanilla)
  • 2 large eggs
  • 120g unsweetened applesauce
  • 1 tsp pure vanilla extract
  • 1 tbsp liquid stevia or monk fruit sweetener
  • 150g fresh blueberries
  • 1 tbsp extra oat flour (for dusting berries)

Instructions:

  1. Preheat and Prep. Set your oven to 375°F (190°C). Line a 12 cup standard muffin tin with silicone liners. Note: The higher temperature helps create that initial burst of steam for a better rise.
  2. Whisk the Dry Base. In a large bowl, combine 180g oat flour, 60g protein powder, 2 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp sea salt. Whisk until the mixture looks like fine sand with no clumps.
  3. Mix the Wet Emulsion. In a separate bowl, whisk 245g Greek yogurt, 2 large eggs, 120g applesauce, 1 tsp vanilla, and 1 tbsp liquid sweetener until the mixture is completely smooth and pale yellow.
  4. The Berry Dusting. Toss 150g fresh blueberries with 1 tbsp of extra oat flour in a small bowl until every berry is ghostly white. Note: This prevents them from sinking.
  5. Combine Carefully. Pour the wet ingredients into the dry. Use a spatula to fold until you see no more streaks of flour. Stop immediately; do not overwork it.
  6. Add the Berries. Gently fold in the dusted blueberries. The batter should be thick and hold its shape.
  7. Portion the Batter. Divide the mixture evenly between the 12 cups. They should be filled nearly to the top.
  8. Bake for Success. Bake for 20 minutes until the tops are golden brown and a toothpick comes out clean.
  9. The Cool Down. Let them sit in the tin for 10 minutes until they are firm enough to handle. Move to a wire rack to finish cooling. > Chef's Note: If you find your protein powder is particularly sweet, you can omit the liquid stevia entirely.
