Ingredients:

  • 1 medium ripe banana, mashed (approx. ½ cup / 115g)
  • ¼ cup (55g) melted coconut oil
  • ⅓ cup (65g) coconut sugar
  • 1 tsp (5ml) pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ tsp (1g) ground cinnamon
  • ½ cup (85g) dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together the melted coconut oil and coconut sugar until well combined.
  3. Stir in the mashed banana and vanilla extract until the mixture forms a smooth, pale paste.
  4. Sift the all-purpose flour, baking soda, salt, and ground cinnamon directly into the wet ingredients.
  5. Use a spatula to gently fold the mixture together; stop as soon as no white streaks of flour remain to avoid over-mixing.
  6. Fold in the dark chocolate chips.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 9–11 minutes, removing them when the edges are barely golden brown and the centers remain soft.
  9. Let the cookies cool on the pan for 5 minutes to allow the structure to set before transferring.
