Ingredients:
- 6 large Granny Smith or Honeycrisp apples (approx. 1.3kg)
- 3 tbsp melted unsalted butter
- 2 tbsp water
- 1 cup old fashioned rolled oats (90g)
- 1/2 cup packed light brown sugar (100g)
- 1 tsp ground cinnamon (2g)
- 1/4 cup cold unsalted butter, cubed (57g)
- 1/4 cup finely chopped pecans (30g)
- 1/4 tsp salt (1g)
Instructions:
- Preheat the oven to 375°F (190°C). Use an apple corer to remove the center of each apple, stopping about 1/2 inch before hitting the bottom to create a vessel for the filling.
- Place the apples upright in a 9x13 inch baking dish. Brush the outside of each apple with melted butter and pour water into the bottom of the dish to prevent sticking.
- In a medium mixing bowl, stir together the rolled oats, brown sugar, cinnamon, and salt.
- Add the cubed cold butter to the oat mixture. Use a fork or pastry cutter to cut in the butter until the mixture resembles coarse wet sand with a few pea-sized lumps. Fold in the chopped pecans.
- Spoon the oatmeal mixture generously into the center of each apple, pressing down slightly with the back of a spoon to pack it in.
- Bake for 35–45 minutes until the apples are tender when pierced with a fork and the topping is golden-brown.
